For a low-calorie dressing, sometimes I use dill pickle juice, or the juice from Costco marinated artichoke hearts.
I shake up the pickle juice to get the spices off the bottom, then pour a bit over the salad before tossing.
I use a turkey baster to take the oil off the top of the Costco artichoke hearts, to lower the fat content. I also shake up this juice so that the spices come up off the bottom, then pour.
