Recipe Drop #1: Almond Flour Lemon Poppyseed Muffins
My kitchen is overflowing with lemons thanks to the abundant citrus we’ve gleaned as part of the extrafood.org Share the Bounty program. I’ve juiced, dehydrated, and preserved enough lemons to get me through the next year. But to enjoy now? These muffins are full of lemony flavor, slightly sweet, and enough protein, fiber, and healthy fat to be both delicious and satisfying. Enjoy!
